Venera Vecchia SuperGold Parmigiano Reggiano
"Latteria Agricola Venera Vecchia", located near Mantua in the North of Italy, was born as a creamery at the very beginning of the the twentieth century. It became a cooperative during postwar period with 39 contributing shareholders. The dairy is represented today by 17 contributing shareholders that give 180.000 quintals of milk every year, to produce a total of 32.000 wheels of Parmigiano-Reggiano.
The first and foremost target of “Latteria Agricola Venera Vecchia" is the production of the authentic Parmigiano-Reggiano, preserving the tradition and the typical features of the product: both a gastronomic excellence and a legacy in cultural significance.
This long path in quality and passion has been rewarded at WCA 2015, in Birmingham. Both Venera's master cheese maker, Mr Fausto Baccarini, and Parmigiano Reggiano 18 months old received a SuperGold medal, the highest prize bestowed by this prestigious international competition.
The first step in producing Venera's Parmigiano must be found in the sheds of Gonzaga (a little countryside village near Mantua), where the few neighbouring farmers milk Holstein cows obtaining 35/40 lt on average for each animal.
After the milking operations the milk is carried to the dairy. The cheesemaking process involves people that have a good competence and knowledge in this field, that under the wise direction of the master cheese maker can complete the ancient and traditional rituals necessary to create the real and “mythical” wheel of Parmigiano-Reggiano.
The seasoning takes place in the warehouse of “Latteria Agricola Venera Vecchia”, that has a storage capacity up to 54.000 wheels of Parmigiano-Reggiano. Here periodically is conducted the general checkup and stamping of the wheels, made only by specialized personnel.
Venera's Parmigiano can be recognized for its sturdy and yet gentle taste. Structure is flacky, straw yellow, with a nice butter feeling on the tongue. Scent is composite and persistent, with notes of dried fruits, broth and nutmeg.
